Should I solve a coding challenge in multiple languages?

No. There is no real need to submit a challenge in two or more languages. Of course some companies may be impressed that you are showcasing your skill in multiple languages. However we don't think it's required. If you've cleared the coding challenge in one language, that should be enough to move you forward to interviews.
